Whip up a quick and delicious chicken fried rice with tender chicken, fluffy eggs, savory onions, sweet carrots, and peas in a flavorful stovetop dish.
Ingredients:
  • 3/4 pound boneless skinless chicken thighs
  • 1 teaspoon salt, divided
  • 3 tablespoons canola oil (or any high heat oil), divided
  • 3 large eggs, whisked
  • 2/3 cup yellow onions, diced
  • 2 cloves garlic, minced
  • 2 teaspoons minced ginger
  • 1 large carrot, peeled and diced
  • 2/3 cup frozen peas, rinsed under warm tap water for a few seconds thaw
  • 4 cups cooked jasmine rice (preferably leftover from at least a day before, see Recipe Note)
  • 2 scallions, sliced (separate the white and light green parts from the dark green part)
  • 1/2 teaspoon Chinese five-spice powder (optional)
  • 2 1/2 tablespoons soy sauce or tamari
  • 1 teaspoon sesame oil
Instructions:
  • Dice the chicken into small 1/4-inch to 1/2-inch cubes and season with 1/2 teaspoon of salt. Allow the chicken to rest for 10 minutes while you prep the vegetables.
  • Heat your wok or large sauté pan over medium-high heat with a swirl of oil. Add the whisked eggs and scramble them swiftly with a spatula, breaking the curds into smaller pieces as they cook. Transfer the scrambled eggs to a plate.
  • For cooking the chicken: Heat an additional tablespoon of oil in the wok. Cook the chicken for 4 to 5 minutes, stirring occasionally. Remove the cooked chicken to a plate. Clean the wok by scraping off any stuck chicken bits with a spatula and using paper towels to wipe it down. This prevents burning in the next step.
  • Prepare the vegetables: Heat 1 tablespoon of oil in a wok over medium-high heat. Sauté onions for 1 minute until they soften. Stir in garlic and ginger until fragrant, about 30 seconds. Add carrots and cook for 2 minutes, then add 1/2 teaspoon of salt and peas, stirring well.
  • Add rice to the wok with vegetables and stir. Smash large rice chunks. Add white and green scallion parts, five-spice powder. Mix well. If sticking, add more oil. Drizzle soy sauce and sesame oil. Stir in chicken, eggs, dark scallion parts. Combine and cook 1-2 minutes.
