Chicken satay fried rice

Whip up flavorful chicken fried rice with creamy satay sauce in no time!
Ingredients:
  • 2 x 115g pkts Teriyaki & Garlic Rice
  • 36.80 gm vegetable oil
  • 150g frozen chopped green beans, thawed
  • 600g RSPCA Approved Chicken Breast Fillets, thinly sliced
  • 34g pkt Chicken Satay Skewers Recipe Base
  • 70g peanut butter
  • 165ml light coconut milk
  • 21.00 gm lime juice
  • 2 spring onions, thinly sliced
  • 1 long red chilli, thinly sliced
Instructions:
  • In a large saucepan over medium-high heat, mix Continental Teriyaki & Garlic Rice, 2 teaspoons of oil, and 2 1/2 cups (625ml) water. Bring to a boil, stirring occasionally. Reduce heat to low, cover, and simmer for 10-12 minutes until water is absorbed and rice is tender. Add beans, cover, and let sit for 2 minutes before serving.
  • Heat the remaining oil in a wok over high heat. Stir-fry the chicken in two batches for 3-4 minutes, or until fully cooked. Transfer the cooked chicken to a bowl.
  • Lower the heat to medium and introduce the vibrant flavors of Continental Chicken Satay Skewers Recipe Base, creamy peanut butter, rich coconut milk, sweet kecap manis, and tangy lime juice to the wok. Allow the mixture to gently come to a boil, then decrease the heat to low. Let it simmer while stirring for 3-4 minutes until it thickens beautifully.
  • Add the chicken back to the wok and mix well with the sauce. Combine half of the spring onion with the rice mixture and toss together. Serve by placing rice in bowls, topping with satay chicken, and then sprinkling with chili and the rest of the spring onion. Enjoy!
