Delicious chicken thighs in a rich, creamy sauce for a special meal.
Ingredients:
  • 2 slices bacon, cut into 1/4-inch pieces
  • 4 boneless chicken thighs
  • 2 tablespoons chicken broth
  • 2 tablespoons whipping cream
  • 2 oz cream cheese, softened, cut into cubes
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chopped fresh thyme leaves
  • Fresh thyme sprigs, if desired
Instructions:
  • In a spacious nonstick skillet, sizzle bacon over medium-high heat for 3 minutes, stirring occasionally. Introduce garlic and chicken to the skillet. Lower the heat to medium, cover, and simmer for 10 to 15 minutes, flipping the chicken over once, until the chicken's center is fully cooked and its juices run clear (minimum 165°F). Transfer the chicken to a plate and cover to maintain warmth.
  • After cooking the bacon and garlic in the skillet, add broth and whipping cream over medium-low heat. Gradually whisk in cream cheese and mustard until the sauce is smooth. Mix in chopped thyme and continue cooking for 3 minutes until the sauce thickens and starts to boil slightly.
  • Garnish the chicken with thyme sprigs and serve with sauce.
