Chicken Kabobs in Peanut Sauce

30-Minute Lime-Peanut Chicken Kabobs with Pineapple Juice - Quick and Flavorful Dinner.
Ingredients:
  • 1/4 cup lime juice
  • 2 tablespoons reduced-fat peanut butter
  • 2 teaspoons grated lime peel
  • 1/2 teaspoon salt-free all-purpose spice and herb blend
  • 1/4 teaspoon ground ginger
  • 2 skinless boneless chicken breast halves (about 1/2 pound), cut into 1-inch pieces
  • 1 kiwifruit, peeled and chopped
  • 1 can (8 ounces) pineapple chunks in juice, drained and juice reserved
  • 2 cups hot cooked brown or wild rice
Instructions:
  • Combine lime juice, peanut butter, lime peel, spice and herb blend, and ginger in a blender and puree until smooth. Marinate the chicken in the lime-peanut mixture, then cover and refrigerate for 15 minutes to 2 hours.
  • Preheat oven to broil. Grease a broiler pan with nonstick spray. Thread drained chicken pieces onto skewers, leaving space between each. Arrange the skewers on the pan's rack. Broil the chicken 3 to 4 inches from the heat for 4 to 5 minutes. Flip the chicken, brush with reserved marinade, and broil for an additional 3 to 4 minutes until cooked through. Serve the chicken skewers over rice with kiwifruit and pineapple, then drizzle with 1 tablespoon pineapple juice.
