Delicious Chicken Mango Lettuce Wraps: Stir-fried chicken, shiitake mushrooms, diced mango in lettuce wraps.
Ingredients:
  • 1 pound ground chicken (I use ground chicken thighs for more flavor)
  • 2 teaspoons soy sauce (use gluten-free soy sauce if cooking gluten-free)
  • 1 teaspoon cornstarch (or potato or rice starch)
  • 1 teaspoon cooking oil (peanut oil or canola)
  • 2 green onions, chopped
  • 4 ounces fresh shiitake mushrooms, sliced
  • 2 teaspoons seasoned rice vinegar
  • 1/2 teaspoon toasted sesame oil
  • 1 large mango, diced (see How to Cut a Mango )
  • 1 head butter lettuce, rinsed, leaves separated
Instructions:
  • Combine ground chicken, soy sauce, and cornstarch in a large bowl and mix well.
  • In a hot wok or sauté pan, sizzle oil with green onions and sliced shiitake mushrooms for about a minute.
  • Increase the heat to high, then add the ground chicken, soy sauce, and cornstarch mixture. Use a wooden spoon to break up the chicken and spread it around the pan. Stir-fry for 5 to 7 minutes until the chicken is fully cooked.
  • Add a delightful combination of seasoned rice vinegar, sesame oil, and fresh diced mango to the dish. Remove from heat and adjust the seasonings like rice vinegar, sesame oil, and soy sauce to suit your preference.
  • Fill lettuce cups with your favorite meat, garnish with cilantro and try alternative fruits like mandarin oranges. Drizzle with chili sauce or add chili pepper flakes to oil while cooking.
