Delicious chicken meatballs wrapped in lavash bread for a fun and easy meal.
Ingredients:
  • 800g chicken mince
  • 1 onion, finely chopped
  • 2 tsp finely grated lemon rind
  • 60g (1 cup) fresh white breadcrumbs
  • 8 pieces lavash bread
  • Rocket Salad, to serve (see related recipe)
  • Caesar dressing, to serve
Instructions:
  • Preheat your oven to 180°C. Combine mince, onion, garlic, lemon rind, and breadcrumbs in a large bowl. Season with salt and pepper, then mix thoroughly using your hands.
  • Roll the mince mixture into 1-tablespoon sized balls using damp hands.
  • In a large non-stick frying pan over medium heat, heat half of the oil. Cook half of the meatballs for 12 minutes, turning occasionally until golden and cooked through. Transfer to a plate and cover with foil. Repeat with the rest of the oil and meatballs, making sure to reheat the pan between batches.
  • Arrange the meatballs on a platter, alongside the lavash bread, rocket salad, and Caesar dressing for a delicious presentation.
