Ingredients:
  • 500g chicken breast mince
  • 4 green onions, finely chopped
  • 40.00 ml fresh flat-leaf parsley leaves, chopped
  • 1 1/2 tsp grated lemon rind
  • 62.50 ml freshly grated parmesan cheese
  • 61.88 gm mayonnaise
  • 375g packet bacon, rind removed
  • extra light olive oil, for cooking salad, to serve
Instructions:
  • Combine chicken, onions, parsley, garlic, lemon rind, parmesan, mayonnaise, salt, and pepper in a mixing bowl, then mix thoroughly with your hands.
  • Roll mixture into small balls and place them on a baking tray, gently pressing down on each one. Cut bacon into pieces long enough to wrap around the chicken patties, then use toothpicks to secure the bacon in place.
  • Heat oil in a non-stick frying pan or barbecue plate over medium heat. Cook patties in batches for 3 to 4 minutes per side until golden and cooked through. Serve hot with salad leaves.
