Kids can make their own wholesome chicken nuggets.
Ingredients:
  • 1 egg, lightly whisked
  • 45g cornflake crumbs
  • 1 (about 200g) chicken breast fillet, cut into 3cm pieces
  • 1 small (about 290g) orange sweet potato (kumara), peeled, cut into 1cm-thick slices
  • Olive oil spray
  • Sweet chilli sauce, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 200C and prepare 2 baking trays by lining them with baking paper.
  • Set up a double breading station by placing the egg in one bowl and the cornflake crumbs in another. Coat a piece of chicken in the egg, then the cornflake crumbs, ensuring it is well coated. Transfer the coated chicken to a prepared tray.
  • Cut out star shapes from the sweet potato slices using a 4cm-diameter pastry cutter and transfer them to the second tray.
  • Lightly coat the chicken and sweet potato in olive oil spray. Bake the sweet potato for 10 minutes, then add the chicken and bake for an additional 10-15 minutes until the nuggets are cooked through and the sweet potato is tender. Serve with sweet chili sauce and salad leaves.
