Italian Chicken Pasta Stir-Fry: A flavorful blend of chicken, penne, peppers, garlic, tomatoes, oregano, and basil for a quick and delicious meal.
Ingredients:
  • 8 ounces dry penne pasta
  • 1 tablespoon cornstarch
  • 1 (15 ounce) can chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 4 skinless, boneless chicken breast halves - cut into cubes
  • 1 onion, sliced
  • 0.5 green bell pepper, seeded and thinly sliced
  • 0.5 red bell pepper, seeded and thinly sliced
  • 1 (16 ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 cup medium-dry white wine
  • 0.5 cup freshly grated Parmesan cheese
Instructions:
  • 1. Boil a pot of salted water. Add penne pasta and cook until al dente, about 8 to 10 minutes. Drain and set aside.
  • Combine the cornstarch and chicken broth in a bowl, whisking until smooth. Set aside for later use.
  • In a skillet over medium heat, cook garlic and chicken in olive oil until chicken is no longer pink and juices run clear. Add onion, green and red peppers, cook until tender. Stir in tomatoes, simmer for 10 minutes. Pour in chicken broth mixture and wine (optional), season with oregano and basil. Add cooked pasta, simmer until heated, about 5 minutes. Serve garnished with Parmesan cheese.
