Cozy up with this comforting chicken potato soup - a heartwarming twist on classic chicken noodle, perfect for chilly days.
Ingredients:
  • 2 skinless, boneless chicken breasts, diced
  • 1 pinch seasoned salt, or to taste
  • ground black pepper to taste
  • 0.5 onion, chopped
  • 0.5 teaspoon minced garlic
  • 4 cups chicken broth
  • 2 cups water
  • 2 large russet potatoes, quartered and thinly sliced
  • 2 carrots, chopped
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • In a large soup pot over medium-high heat, warm up some oil. Season the chicken with seasoned salt and pepper, then place it in the pot. Cook and stir occasionally until the chicken is no longer pink in the center, approximately 5 minutes.
  • Sauté onion until nearly translucent for about 5 minutes, then add garlic and cook until lightly browned for about 2 minutes.
  • Combine broth, water, potatoes, carrots, and celery in a pot and simmer until veggies are tender, about 15 to 20 minutes. Season with salt, pepper, and cayenne to taste before serving.
