Party-perfect chicken quesadillas: Flour tortillas stuffed with seasoned chicken, peppers, onions, cheese, and crispy bacon.
Ingredients:
  • 1 pound skinless, boneless chicken breast, diced
  • 1 (1.27 ounce) packet fajita seasoning
  • 1 tablespoon vegetable oil
  • 2 green bell peppers, chopped
  • 2 red bell peppers, chopped
  • 1 onion, chopped
  • 10 (10 inch) flour tortillas
  • 1 (8 ounce) package shredded Monterey Jack cheese
  • 1 tablespoon bacon bits
Instructions:
  • Prepare your ingredients, preheat the broiler, and lightly grease a baking sheet.
  • Coat chicken with flavorful fajita seasoning and lay evenly on baking sheet. Broil until chicken is fully cooked and no longer pink in the center, approximately 5 minutes.
  • Preheat the oven to 350°F (175°C).
  • In a large saucepan over medium heat, heat oil until shimmering. Add bell peppers, onion, and broiled chicken. Saute until veggies are tender, about 10 minutes, stirring occasionally.
  • Spread a generous portion of the chicken and vegetable mixture, Cheddar cheese, Monterey Jack cheese, and bacon bits over half of each tortilla.
  • Place folded tortillas on a baking sheet.
  • Bake quesadillas until cheeses are melted, about 10 minutes in the preheated oven. Cut each quesadilla into wedges.
  • Serve alongside a delicious duo of salsa and sour cream. Bon appétit!
