Satisfying low-fat soup perfect for lunch or a winter appetizer.
Ingredients:
  • 1 dried bay leaf
  • 900g chicken bones
  • 1 celery stick, trimmed, coarsely chopped
  • 1 carrot, peeled, coarsely chopped
  • 1 brown onion, halved, coarsely chopped
  • 1 tsp whole black peppercorns
  • 4 stems fresh parsley
  • 2.5L (10 cups) cold water
  • 170g orange sweet potato (kumara), peeled, cut into 2cm cubes
  • 170g turnip, peeled, cut into 2cm cubes
  • Salt & freshly ground black pepper
  • 2 (about 430g) single chicken breast fillets
  • 125.00 ml loosely packed coarsely chopped mixed fresh herbs (such as chives, parsley and thyme)
  • 1 garlic clove, crushed
  • 1 x 270g pkt (8.5 x 8.5cm) fresh flour wonton wrappers
  • 80g (1/2 cup) frozen green peas, thawed
Instructions:
  • In a large saucepan, add chicken bones, celery, carrot, onion, peppercorns, bay leaf, parsley, and water. Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer, covered, skimming occasionally for 45 minutes. Strain the stock through a sieve into another saucepan.
  • In a pot over medium heat, combine the stock, sweet potato, and turnip. Bring to a boil, then reduce heat to low and simmer for 15 minutes. Season to taste with salt and pepper.
  • Place chicken, herbs, and garlic in a food processor and season with salt and pepper. Process until minced and well combined, then transfer to a bowl. Spoon a rounded teaspoon of the chicken mixture onto the center of each wonton wrapper. Lightly brush the edges with water, fold in half diagonally to create a triangle, and press to seal. Make sure to remove any air bubbles. Repeat with the rest of the wrappers and chicken mixture.
  • Toss in the peas and simmer for 2 minutes. Introduce the chicken ravioli with a delicate stir. Simmer without a lid for an additional 2-3 minutes until the ravioli are tender and the peas are vibrant green.
  • Serve the soup in bowls right away.
