Crunchy salad with tangy BBQ chicken, ideal for sunny days.
Ingredients:
  • 2 x 450g rice noodles
  • 1/2 country roast chicken, skin removed and shredded
  • 1 bunch asparagus, julienned
  • 6 radish, julienned
  • 80ml lime juice
  • 16.00 gm brown sugar
  • 1 small red chilli, seeded, chopped
  • 1 clove garlic, crushed
  • 60.00 ml chopped fresh mint
  • Salt & white pepper
  • Extra mint leaves
Instructions:
  • Prepare the noodles as instructed on the packet. Rinse them in cold water and drain thoroughly. Combine with chicken, asparagus, and radish.
  • Whisk lime juice, brown sugar, chili, garlic, and mint in a small bowl. Season with salt and pepper. Pour over salad, toss to combine, and serve garnished with extra mint leaves.
