Delicious coconut curry marinated chicken satays for the win!
Ingredients:
  • 252.50 gm coconut cream
  • 20.00 gm good-quality mild curry powder
  • 4 garlic cloves
  • 32.00 gm brown sugar
  • 40ml (2 tbsp) Thai fish sauce
  • 80.00 ml chopped coriander root and stem
  • 1kg chicken breast fillets, cut into 2cm pieces
Instructions:
  • In a blender, combine coconut cream, curry, garlic, sugar, fish sauce, and coriander until smooth. Coat chicken in marinade in a non-metallic bowl. Refrigerate covered overnight. The following day, skewer 3-4 chicken pieces on each stick.
  • Preheat the grill to high heat. Grill the ingredients for 5-7 minutes, turning occasionally, until fully cooked. Serve on platters with mango chutney, if desired.
