Upgrade your dinner game with delicious chicken schnitzel and creamy mashed potatoes.
Ingredients:
  • 437.50 ml fresh breadcrumbs
  • 62.50 ml finely chopped fresh basil leaves
  • 62.50 ml plain flour
  • 2 eggs
  • 20.60 gm milk
  • 4 (450g total) chicken minute steaks (see note)
  • Vegetable oil, for shallow frying (see tip)
  • Salad leaves, to serve
  • Lemon wedges, to serve
  • 800g desiree potatoes, peeled, quartered
  • 128.75 gm milk, warmed
  • 50g butter, chopped
Instructions:
  • For creamy mashed potatoes: Start by boiling potatoes in a large saucepan with salted water until tender. Drain and return to the pan. Mash roughly with a potato masher, then add milk and butter and continue mashing until smooth. Season with salt and pepper to taste.
  • Combine breadcrumbs with fragrant basil on a generous, inviting plate. Spread flour on a spacious, welcoming plate, then season it with a perfect pinch of salt and pepper. Whisk together eggs and milk in a shallow, charming dish.
  • Dust the chicken piece with flour, shaking off any extra. Dip it in the egg mixture, then coat it with breadcrumbs. Place on a plate and repeat the process with the remaining chicken pieces, flour, egg, and breadcrumbs.
  • In a hot frying pan, sear chicken pieces in batches for 3-4 minutes on each side until golden and fully cooked. Place on a paper towel-lined plate to drain excess oil. Serve with mashed potatoes, fresh salad, and lemon wedges for a delicious meal.
