Indulge in homemade crispy chicken schnitzel wings, a kid-friendly alternative to fast food.
Ingredients:
  • 375.00 ml panko breadcrumbs
  • 1/2 tsp garlic powder
  • 2.50 gm smoked paprika
  • 82.50 ml finely grated parmesan
  • 165.00 ml plain flour
  • 2 eggs
  • 1kg chicken nibbles
  • Olive oil cooking spray
  • 400g frozen shoestring fries
  • 125.00 ml low-fat Greek yoghurt
  • 21.00 gm lemon juice
  • 20.00 ml chopped fresh dill leaves, plus extra sprigs to serve
  • Salad, to serve
Instructions:
  • Preheat the oven to 230C/210C fan-forced, then line a large baking tray with baking paper.
  • In a large bowl, mix together breadcrumbs, garlic powder, paprika, parmesan, salt, and pepper. Place flour in another large bowl and whisk eggs in a separate bowl.
  • Take chicken nibbles and coat them in flour, then dip them in egg followed by breadcrumb mixture until fully coated. Arrange them in a single layer on a prepared tray and generously spray with oil.
  • Bake until golden and chicken is cooked through, about 20 minutes.
  • While the fries are cooking according to the package instructions, mix together yoghurt, lemon juice, and dill in a bowl. Season the mixture with salt and pepper. Garnish the chicken with additional dill sprigs. Serve the chicken with the fries, yoghurt mixture, salad, and lemon wedges.
