Tender chicken coated in crispy Cheerios® crust - a simple and delicious schnitzel for busy nights.
Ingredients:
  • 4 skinless, boneless chicken breast halves, trimmed
  • 0.5 cup all-purpose flour
  • 2 eggs
  • 1 cup crushed toasted oat cereal (such as Cheerios®)
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons vegetable oil
  • 2 lemons, quartered
Instructions:
  • Place the chicken between 2 sheets of heavy plastic on a sturdy surface and pound it with a meat mallet until it reaches 1/4-inch thickness.
  • Put the flour in a bowl. Whisk the eggs in another bowl. Combine crushed oat cereal, garlic powder, salt, and black pepper in a large resealable plastic bag.
  • Coat chicken breasts in flour, then dip in eggs, letting excess drip off. Transfer to cereal mixture in a bag, seal, and shake until evenly coated. Chill coated chicken on a plate in the fridge for 1 hour.
  • In a 12-inch skillet over medium-high heat, brown the chicken in oil for 3 to 4 minutes per side. Then, place the chicken on a paper towel-lined plate and squeeze fresh lemon over each piece.
