Golden crispy chicken schnitzel served with creamy mango sauce for a delectable main course.
Ingredients:
  • 4 skinless, boneless chicken breasts
  • 3 eggs
  • 4 cups bread crumbs
  • 2 mangos, peeled and coarsely chopped
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup heavy whipping cream
  • 2 tablespoons mango jam
  • 0.25 cup vegetable oil, or as needed
  • 2 shallots, chopped
  • sea salt to taste
Instructions:
  • Lay the chicken on a sturdy surface and gently flatten to 1/4-inch thickness using the flat side of a meat mallet.
  • Place flour in a shallow bowl. In a separate bowl, mix eggs and water. Spread bread crumbs on a shallow plate.
  • Coat each chicken breast with flour, then dip in the egg mixture and press into the bread crumbs to coat both sides. Arrange the breaded chicken on a large plate.
  • Blend mangoes, cream cheese, heavy cream, and mango jam until smooth. Chill in the refrigerator to thicken.
  • In a large skillet over medium heat, sizzle the breaded chicken in hot oil until it turns golden brown and cooks through, around 3 minutes per side.
  • Drizzle luscious mango sauce over tender chicken, then top with fresh shallots and a sprinkle of sea salt for a burst of flavor.
