Hearty chicken cabbage soup packed with veggies, garlic, and herbs - a cozy low-carb stew for winter warmth and healing.
Ingredients:
  • 6 quarts water, divided
  • 1 whole chicken, giblets removed
  • 5 carrots, chopped
  • 4 stalks celery, chopped
  • 1 medium onion, chopped
  • 2 cups chopped cabbage
  • 0.25 cup white wine
  • 2 tablespoons chicken bouillon granules
  • 2 tablespoons dried dill weed
  • 1 tablespoon butter, or to taste
  • 1 tablespoon dried parsley
  • 1 tablespoon ground thyme
  • 2 cloves garlic, minced
  • 2 teaspoons ground white pepper
  • 2 bay leaves
Instructions:
  • In a large pot, add 4 quarts of water and bring it to a boil with the chicken. Cook until the chicken meat easily falls off the bone, approximately 45 minutes. Next, transfer the chicken to a platter and cover it with plastic wrap. Cover the pot with a lid and refrigerate the chicken and broth until the chicken is cool enough to handle, about 40 minutes.
  • Separate chicken meat from bones; reserve. Remove any excess fat from the chilled broth.
  • Combine the 2 quarts of water with the chicken, carrots, celery, onion, cabbage, wine, bouillon, dill, butter, parsley, thyme, garlic, white pepper, and bay leaves in the pot with the broth. Simmer over medium heat until vegetables are tender, approximately 30 minutes.
