Spicy sriracha chicken meatballs are versatile for parties or meals with rice.
Ingredients:
  • 0.75 cup panko bread crumbs
  • 0.33333334326744 cup sriracha sauce
  • 0.25 cup diced water chestnuts, drained
  • 1 small carrot, grated finely
  • 0.25 cup chopped cilantro
  • 1 large egg, lightly beaten
  • 1 pound lean ground chicken
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously grease a rack placed in a shallow baking pan.
  • Combine panko crumbs, sriracha, water chestnuts, carrot, cilantro, egg, and ground chicken in a large bowl, mixing gently but ensuring everything is well incorporated.
  • Form the mixture into 25 balls each measuring 1 inch in diameter and place them on the prepared rack.
  • Bake in the preheated oven for 20-25 minutes, or until an instant-read thermometer inserted into the center reads at least 160°F (70°C).
