Tender chicken cooked in a delicious sweet and spicy sauce, perfect served over fluffy rice.
Ingredients:
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, diced
  • 2 pounds skinless, boneless chicken breast halves, cut into cubes
  • 1 cup water
  • 0.5 cup soy sauce
  • 2 teaspoons Sriracha hot sauce, or more to taste
  • 1 (12 ounce) jar orange marmalade
Instructions:
  • In a large skillet over medium heat, sauté onion and garlic in olive oil until onion softens, about 5 to 7 minutes.
  • Turn up the heat to medium-high, then add the chicken to the onion mixture. Cook and stir until the chicken is fully cooked through and the juices run clear, which should take about 5 to 10 minutes.
  • Combine water, soy sauce, and Sriracha sauce with the chicken mixture, stirring well. Lower the heat to medium, cover the skillet, and simmer for 30 minutes. Add in the marmalade, bring to a simmer, and continue cooking until the chicken is tender and easily falls apart, around 15 minutes.
