Quick and easy chicken avocado tacos for a delicious Mexican dinner in 25 minutes!
Ingredients:
  • 1 small avocado
  • Lemon juice
  • 2 tablespoons vegetable oil
  • 2 cups chopped cooked chicken
  • 1 can (4 1/2 ounces) chopped green chiles, drained
  • 1 small onion, sliced
  • 10 taco shells
  • 2 cups shredded Monterey Jack cheese (8 ounces)
  • 1/3 cup sliced pimiento-stuffed olives
  • 1 cup shredded lettuce
  • Taco sauce, if desired
  • Sour cream, if desired
Instructions:
  • Halve the avocado, remove pit and peel, then slice. Drizzle with lemon juice to preserve freshness.
  • In a 10-inch skillet, warm oil over medium heat. Cook chicken, chiles, and onion in the oil, stirring occasionally, until the chicken is heated through. Follow package instructions to warm taco shells.
  • Fill each shell generously with 1/4 cup of flavorful chicken mixture. Layer on cheese, olives, lettuce, and creamy avocado. Serve alongside zesty taco sauce and cooling sour cream.
