Chicken with Grapes and Thyme

Sweet, juicy grapes elevate this simple baked chicken dish.
Ingredients:
  • 2 teaspoons olive oil
  • 4 bone-in chicken leg quarters (2 lb), skinned
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
  • 2 cups seedless red grapes
  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
  • 4 large shallots, peeled, quartered
  • Fresh thyme sprigs, if desired
Instructions:
  • Preheat oven to 425°F. Heat 1 teaspoon of oil in a 12-inch ovenproof skillet over medium-high heat. Season chicken with pepper and salt, then brown in the skillet for 8 minutes, turning once. Remove skillet from heat.
  • Combine the remaining 1 teaspoon of oil with grapes, chopped thyme, and shallots in a medium bowl. Spoon this flavorful grape mixture around the chicken in the skillet. Bake uncovered for 22 to 25 minutes or until the chicken's juices run clear when the thickest part is cut to the bone (reaching at least 165°F).
  • Top chicken with the flavorful grape mixture and shallots, then elegantly decorate with fresh thyme sprigs.
