Delicious baked chicken with creamy melted mozzarella and savory mushrooms. Perfect over rice or noodles.
Ingredients:
  • 3 cups sliced mushrooms
  • 2 large eggs, beaten
  • 1 cup seasoned bread crumbs
  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 6 ounces mozzarella cheese, sliced
  • 0.75 cup chicken broth
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Arrange half of the mushrooms evenly in a 9x13-inch baking dish.
  • Place eggs in one shallow dish and bread crumbs in another. Coat chicken by first dipping it in the beaten eggs and then rolling it in the bread crumbs. In a skillet over medium heat, melt butter and brown the chicken on both sides.
  • Layer chicken on a bed of mushrooms in the pan. Scatter the rest of the mushrooms over the chicken and sprinkle with mozzarella cheese. Pour chicken broth into the pan.
  • Roast in the preheated oven for 30-35 minutes until the chicken is no longer pink and the juices run clear. Verify doneness with an instant-read thermometer - it should register at least 165 degrees F (74 degrees C) when inserted into the center.
