Whip up a quick and delicious 30-minute chicken skillet dinner with veggies for the whole family.
Ingredients:
  • 1 to 2 teaspoons chopped fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 tablespoon butter or margarine
  • 1 teaspoon finely chopped garlic
  • 1 bag (1 lb) frozen broccoli, cauliflower and carrots
Instructions:
  • Combine fragrant thyme, salt, and pepper, generously sprinkle over the succulent chicken, and let the flavors meld together while you prepare the next step.
  • In a large skillet, melt butter with oil over medium heat. Saute garlic for 1 to 2 minutes until fragrant. Add chicken and cook for 8 to 12 minutes until lightly golden, turning halfway through.
  • Combine frozen vegetables into the dish, cover, and cook for 6 to 8 minutes, stirring occasionally, until the vegetables are hot and crisp-tender and the chicken's juices run clear when the thickest part is cut (reaching 170°F).
