Whip up flavorful bacon and green chili quesadillas in 20 minutes on your contact grill for a taste of Mexico.
Ingredients:
  • 8 slices bacon
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, undrained
  • 1 can (2.25 oz) sliced ripe olives, drained
  • 2 tablespoons finely chopped red onion, if desired
  • Cherry tomatoes or pitted large ripe olives, if desired
Instructions:
  • Preheat a medium-sized contact grill for 5 minutes until hot. Arrange bacon strips on the grill, close the lid, and cook for 5 to 6 minutes until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain. Scrape off any drippings from the grill and chop the bacon coarsely.
  • Sprinkle cheese over 4 tortillas. Layer with bacon, chiles, sliced olives, onion, and top with the remaining tortillas; gently press together.
  • Place one quesadilla on the grill at a time and close the lid. Grill for 2 to 4 minutes until light golden brown and the cheese is melted. Cut each quesadilla into 4 wedges and garnish the top of each with a tomato or whole olive using a decorative toothpick.
