Savory corn dumplings cook atop delicious chili for a comforting winter meal.
Ingredients:
  • 1 1/2 lbs lean ground beef
  • 3/4 cup chopped onion
  • 1 can (15.25 oz) whole kernel corn, undrained
  • 1 can (16 oz) stewed tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon red pepper sauce
  • 1 1/3 cups Original Bisquick™ mix
  • 2/3 cup cornmeal
  • 2/3 cup milk
  • 2 to 4 tablespoons chopped fresh cilantro or parsley, if desired
Instructions:
  • In a Dutch oven over medium heat, sauté beef and onion until beef is browned; drain. Set aside 1/2 cup of corn. Mix in the remaining corn with liquid, tomatoes, tomato sauce, chili powder, and pepper sauce. Bring to a boil, then simmer covered for 15 minutes.
  • Combine Bisquick mix and cornmeal, then gently fold in milk, fresh cilantro, and the remaining 1/2 cup of corn until just moistened.
  • Spoon dough in rounded tablespoonfuls into simmering chili. Cook uncovered on low heat for 10 minutes. Cover and cook for an additional 10 minutes or until dumplings are dry.
