Delicious shrimp fajitas with sauteed veggies, cilantro, gooey Cheddar, and creamy sour cream - ready in under 1 hour!
Ingredients:
  • 0.5 cup olive oil
  • 0.5 cup chopped fresh cilantro, divided
  • 3 tablespoons chili powder
  • 4 large cloves garlic, minced
  • 1 tablespoon lime juice
  • 0.5 teaspoon salt
  • 1 pound frozen shrimp - thawed, peeled, deveined, and cleaned
  • cooking spray
  • 1 onion, sliced into rings and rings separated
  • 1 large green bell pepper, sliced into strips
  • 1 serrano chile pepper, sliced, or more to taste
  • 4 (8 inch) flour tortillas
  • 1 cup shredded Cheddar cheese, or to taste
  • 0.5 cup shredded lettuce, or to taste
  • 0.25 cup sour cream, or to taste
  • 0.25 cup chopped tomatoes, or to taste
Instructions:
  • Combine olive oil, 1/4 cup cilantro, chili powder, garlic, lime juice, and salt in a bowl. Add shrimp, mix well, and chill in the refrigerator for 20 minutes.
  • Heat a large skillet over medium-high heat and spray with cooking spray. Saute onion, green bell pepper, and serrano chile pepper until tender, about 10-12 minutes. Keep vegetables warm by covering the bowl with aluminum foil.
  • In a skillet over medium-high heat, combine shrimp and marinade. Cook until shrimp turn pink and opaque, about 2 minutes per side. Add vegetables to the skillet with the shrimp, stir, and heat through for 2 to 3 minutes.
  • Spoon the shrimp-vegetable mixture onto the tortillas and top them with Cheddar cheese, lettuce, sour cream, tomatoes, and the remaining 1/4 cup of cilantro.
