Chilli & garlic prawn pizzas

Ingredients:
  • 250.00 gm warm water
  • 1 sachet yeast
  • 5.00 gm caster sugar
  • 625.00 ml plain flour
  • 2.40 gm salt
  • Olive oil
  • 1 small onion, finely chopped
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 22.20 gm tomato paste
  • 20 green prawns, peeled & de-veined
  • Juice of 1 fresh lime
  • 68.75 gm sweet chilli sauce
  • 3 roma tomatoes, diced
  • 1 small green capsicum, diced
  • 250.00 ml pizza cheese
Instructions:
  • Combine water, yeast, and sugar in a small jug. Cover and let sit in a warm place until mixture becomes frothy.
  • In a bowl, gently combine the sifted flour and salt. Gradually incorporate the frothy yeast mixture, then knead on a lightly floured surface until a soft, sticky dough forms. Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and allow it to rise in a warm spot for 1 hour.
  • Drizzle a touch of olive oil into a saucepan and saute the onion until soft. Add the canned tomatoes and tomato paste, stirring until it slightly thickens. Let it cool.
  • Preheat the oven to 200 degrees Celsius.
  • Combine prawns, garlic, sweet chili, and lime juice in a small bowl. Toss until prawns are evenly coated with the flavorful sauce.
  • Flatten the pizza dough with a rolling pin.
  • Spread the tomato sauce mixture over the dough. Layer on the prawns, diced roma tomatoes, and capsicum. Finish by sprinkling on the pizza cheese.
  • Bake until the cheese is gooey and golden brown.
