Whip up a delicious prawn and noodle stir-fry in just 20 minutes!
Ingredients:
  • 400g wok-ready Singapore-style noodles
  • 36.40 gm peanut oil
  • 500g peeled prawns, tails intact
  • 1 red onion, cut into wedges
  • 200g snow peas, trimmed
  • 2 long red chillies, thinly sliced diagonally
  • 44.00 gm sweet chilli sauce
  • 12.20 gm fish sauce
  • 10.60 gm lime juice
  • 20g punnet basil, leaves picked
  • Sliced red chilli, extra, to serve
Instructions:
  • Place the noodles in a bowl and pour boiling water over them. Let them sit for 1 minute, then fluff them up with a fork and drain the water.
  • Heat 1 tablespoon of oil in a hot wok. Quickly cook prawns for 1 minute until they change color. Remove and set aside in a bowl.
  • In the heated wok, sauté onion and snow peas until onion begins to brown. Stir in chili, sweet chili sauce, fish sauce, lime juice, prawns, and noodles. Cook for 2 mins until heated through. Fold in basil. Serve with a sprinkle of extra chili on top.
