Whip up a batch of hearty beef chili for a fuss-free week ahead.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1.8kg gravy beef, quartered, trimmed
  • 1 chorizo, finely chopped
  • 1 large red onion, finely chopped
  • 1 large red capsicum, deseeded, finely chopped
  • 20.00 ml finely chopped coriander root & stem
  • 2 garlic cloves, crushed
  • 10.00 gm ground cumin
  • 7.50 gm sweet paprika
  • 2 tsp dried oregano leaves
  • 1 tsp dried chilli flakes
  • 1/2 tsp ground cloves
  • 2 x 410g cans chopped tomatoes
  • 435ml (1 3/4 cups) water
  • 13.60 gm maple syrup
  • 2 x 400g cans kidney beans, rinsed, drained
  • Steamed steamed brown rice or white rice, to serve
  • Fresh coriander, to serve
  • Thinly sliced green shallot, to serve
  • Sour cream, to serve
Instructions:
  • In a large heavy-based casserole dish over medium-high heat, warm 1 1/2 tablespoons of oil. Season the beef and cook in 2 batches, turning occasionally, for about 5 minutes until nicely browned. Place the beef in a bowl.
  • Heat the remaining oil in the dish over medium heat. Cook the chorizo until golden, then add the onion and capsicum, cooking until soft. Stir in the coriander and garlic until aromatic, then add the cumin, paprika, oregano, chili, cloves, and cinnamon stick, cooking until fragrant.
  • Place the beef back into the dish and stir. Add the tomato, water, and maple syrup. Bring to a gentle simmer, then reduce heat to low. Cover and cook for 2 hours, stirring occasionally, until meat is nearly tender. Transfer beef to a bowl and shred coarsely. Return shredded beef to the dish and continue to simmer, partially covered, for another 30 minutes or until the beef is very tender.
  • Add the kidney beans to the dish and simmer uncovered for 10 minutes or until warmed through. Season to taste and serve with rice, coriander, shallot, and sour cream. Set aside 2 cups of chili beef and extra coriander, sour cream, and shallots for future meals. (Check related recipes for ideas).
