Spicy scallops paired with vibrant Asian greens for a delicious fusion dish.
Ingredients:
  • 2 bunches Chinese broccoli (gai lan), trimmed, cut into 6cm lengths
  • 20 scallops without roe
  • 39.60 gm chilli jam*
  • 9.20 gm olive oil
  • 1 small onion, thinly sliced
  • 10.60 gm light soy sauce
Instructions:
  • Steam the Chinese broccoli over a large saucepan of boiling water, covered, for 2-3 minutes until tender. Drain and set aside.
  • Coat the scallops evenly with 1 tablespoon of the fiery chili jam. Heat a skillet over medium-high heat with 1 teaspoon of olive oil. Sear the scallops for 1 minute on each side until tender. Set aside and cover to stay warm.
  • Drizzle the last teaspoon of oil into the pan and lower the heat to medium. Sauté the onion for 3-4 minutes until softened. Stir in the rest of the 1/2 tablespoon of chili jam and broccoli, ensuring they are well coated. Take the pan off the heat and mix in the soy sauce.
  • Arrange the perfectly seared scallops alongside a colorful assortment of vibrant, crisp vegetables in individual serving bowls.
