Enjoy a flavorful Chinese beef dumpling soup for dinner tonight.
Ingredients:
  • 500.00 ml beef consomme
  • 3 fresh lime leaves (optional - see tips)
  • 1.5l water
  • 1 bunch choy sum, trimmed, chopped
  • 2 spring onions, thinly sliced diagonally
  • 250.00 ml bean sprouts
  • 1 long red chilli, finely chopped
  • Mint leaves, extra, to serve
  • Coriander sprigs, extra, to serve dumplings
  • 500g 5-star beef mince
  • 40.00 ml grated fresh ginger
  • 40.00 ml chopped coriander
  • 40.00 ml chopped mint
  • 65.63 gm soy sauce
  • 48 wonton wrappers (see tips)
Instructions:
  • For the dumplings, mix together the mince, ginger, garlic, coriander, mint, and 2 tablespoons of soy sauce in a large bowl. Place a wrapper on a clean board. Add a heaping teaspoon of the mince mixture to the center of the wrapper. Moisten edges with water and seal by pinching them together. Repeat with the rest of the wrappers and mince mixture. Freeze half of the dumplings for later use.
  • In a large saucepan, mix the consomme, lime leaves, and water. Bring to a boil, then let it simmer for 15 minutes to infuse flavors. Remove and discard the lime leaves.
  • 1. Bring the broth to a rolling boil. Add the rest of the dumplings and let them simmer for 5 minutes, or until they are fully cooked. Finally, incorporate the remaining soy sauce into the mixture.
  • Distribute choy sum and onion evenly in bowls. Pour broth and dumplings over them. Garnish with bean sprouts, chili, extra coriander, and mint on top.
