Chinese cabbage and lamb stir-fry

Quick, budget-friendly, and low-fat dish ready in just 10 minutes.
Ingredients:
  • olive oil cooking spray
  • 500g lean lamb mince (see note)
  • 3cm piece ginger, peeled, grated
  • 300g Chinese cabbage, shredded
  • 1 red capsicum, thinly sliced
  • 4 green onions, sliced diagonally
  • 120g snow peas, trimmed, thinly sliced
  • 67.50 gm hoisin sauce
  • 20.00 gm warm water
Instructions:
  • Preheat a wok over high heat until sizzling. Lightly coat with oil, then add garlic and minced meat. Stir-fry while breaking up the meat with a wooden spoon for 2 to 3 minutes until golden brown. Transfer to a plate and keep aside.
  • Spritz wok with oil one more time. Toss in ginger, cabbage, bell pepper, green onion, and snow peas. Stir-fry for 3 to 4 minutes until veggies are just tender. Add back the minced meat to the wok.
  • Mix the hoisin sauce with warm water, then pour it into the minced meat mixture. Stir-fry for 1 minute or until heated through. Divide into bowls and serve.
