Delicious Shanghai-style Chinese scallion pancakes, a popular and versatile dish!
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon salt, divided
  • 0.75 cup boiling water
  • 0.5 cup cold water, or as needed
  • vegetable oil, or as needed, divided
  • 1 bunch green onions (scallions), minced
Instructions:
  • In a large bowl, combine flour and 1 teaspoon of salt. Add boiling water and mix until absorbed. Gradually add cold water, about 1 tablespoon at a time, until dough forms. Knead dough for 10 minutes, then cover with a damp cloth and let rest for 40 minutes.
  • Place the dough on a dusted work surface and separate it into 4 even portions.
  • Roll out one piece of dough into a large thin round. Brush the top with vegetable oil, sprinkle 1/2 teaspoon salt and 1/4 of the green onions. Roll the dough into a long scroll-shape, then into a disk. Let it rest for 10 minutes and repeat with the remaining dough.
  • In a skillet over medium-low heat, warm 1 tablespoon of vegetable oil. On a floured surface, roll 1 disk into a 1/2-inch thick round; fry in the oil until golden brown, 2 to 3 minutes per side. Repeat with the remaining disks.
