Crispy scallion pancakes: Savory flatbread layered with dough, oil, and scallions for a delicious twist!
Ingredients:
  • 2.25 cups all-purpose flour
  • 0.75 teaspoon salt
  • 0.5 cup boiling water
  • 0.25 cup cold water
  • 3 tablespoons melted chicken fat
  • 1 cup thinly sliced scallions
  • 0.5 cup vegetable oil for frying
Instructions:
  • In a bowl, combine flour and salt. Slowly pour in boiling water while mixing with a fork until all water is absorbed. Add cold water and use your hands to mix until fully incorporated. Transfer mixture to a clean surface and knead for about 5 minutes until smooth. Cover dough with plastic wrap and let rest for 20 minutes.
  • Divide the dough into 4 equal pieces and lightly grease your work surface. Roll out each piece into a thin rectangle. Brush with melted chicken fat and sprinkle 1/4 cup of scallions on top. Roll the dough from the long edge into a rope, then coil it and tuck the end underneath. Gently press down to flatten slightly and set aside. Repeat the process with the rest of the dough and scallions.
  • Prepare a lightly greased work surface to prevent sticking, then roll each dough coil into a 7-inch diameter circle.
  • Preheat a cast iron skillet over medium-high heat and add a generous amount of vegetable oil to cover the pan's surface. Carefully place one pancake into the hot oil and cook for 1 minute. Flip and cook for another minute until both sides are evenly golden. Continue cooking and flipping until desired browning is achieved, using a spatula to press down if needed. Transfer to a cutting board to cool. Repeat with the rest of the pancakes. Serve them while still warm.
