Chinese-style stir-fried pork

Vibrant Chinese stir-fry bursting with fresh veggies, ready in no time.
Ingredients:
  • 160g brown basmati rice
  • 200g higher-welfare pork fillet
  • 1½ teaspoons Chinese five-spice
  • vegetable oil
  • 4 spring onions
  • 1 yellow pepper
  • 2 cloves of garlic
  • 4 cm piece of ginger
  • 1 teaspoon cornflour
  • 50g cashew nuts
  • 1 lime
Instructions:
  • Boil rice in salted water for 25 minutes until tender, then drain. Season and keep warm. Marinate pork with five-spice, salt, pepper, and oil. Prepare vegetables and sauce. Stir-fry pork and cashews until browned. Remove from pan. Stir-fry vegetables, garlic, and ginger. Add sauce and thicken. Return pork to the pan and cook for 2 minutes. Adjust seasoning. Serve pork over rice, garnish with spring onions, and lime wedges.
