Crispy sweet and sour pork with stir-fried lychees and green peppers, a delicious twist on a classic Hong Kong-style dish.
Ingredients:
  • 1 egg yolk
  • 1 teaspoon soy sauce
  • 1 teaspoon rice wine
  • 1 teaspoon cornstarch
  • 0.25 teaspoon ground Sichuan peppercorns
  • 5 ounces pork tenderloin, trimmed of fat and cut into 1-inch cubes
  • 2 tablespoons white vinegar
  • 2 teaspoons tomato paste
  • oil for frying
  • 3 tablespoons cornstarch
  • 1 tablespoon vegetable oil
  • 2 green chile peppers, cut into 1-inch pieces, or more to taste
  • 2 scallions, cut into 1-inch pieces
  • 3 ounces canned lychees, drained
  • 0.25 teaspoon sesame oil
Instructions:
  • Mix together egg yolk, soy sauce, rice wine, cornstarch, salt, and Sichuan peppercorns in a bowl to create a flavorful marinade. Add pork and marinate for a minimum of 30 minutes.
  • Combine vinegar, water, sugar, tomato paste, soy sauce, and cornstarch to create a flavorful seasoning sauce.
  • 1. In a deep saucepan over medium-high heat, heat oil until shimmering. 2. Coat the marinated pork in cornstarch until fully coated. 3. Deep-fry pork for 2 minutes until golden and crispy. 4. Transfer to paper towels to drain excess oil.
  • In a small saucepan over medium heat, heat 1 tablespoon of oil. Quickly stir-fry green peppers and scallions for 30 seconds. Add lychees and pour in the seasoning sauce, stirring until the sauce thickens. Simmer over very low heat.
  • Stir-fry the pork in hot oil until it's crispy, about 30 seconds. Drain on a warm plate, drizzle with seasoning sauce, sprinkle with sesame oil, and serve immediately.
