Chinese-style stir-fry with sausage and sticky rice cooked slowly on stove, reminiscent of risotto.
Ingredients:
  • 2 cups glutinous rice
  • 0.33333334326744 cup dried shrimp
  • 2 dried scallops
  • 8 dried shiitake mushrooms
  • 1 teaspoon olive oil
  • 3 eggs, beaten
  • 3 links Chinese sausage, diced
  • 2 cups hot water, or more as needed
  • 2 tablespoons light soy sauce, or to taste
  • 2 teaspoons dark soy sauce
  • 1 teaspoon white sugar
  • 0.5 cup chopped cilantro, or to taste
Instructions:
  • Place the rice in a large bowl of water and let it sit until it turns mostly translucent, approximately 4 hours. Then, rinse and drain the rice thoroughly.
  • Once the rice is nearly done soaking, submerge the shrimp, scallops, and mushrooms in individual bowls of water until they soften, approximately 15 minutes. Drain the shrimp and scallops. Strain the mushrooms, saving the mushroom water. Proceed by finely chopping the shrimp, scallops, and mushrooms.
  • In a large skillet over medium heat, warm up some olive oil. Pour in the eggs, swirling the skillet to create a thin layer. Cook until mostly set, for about 1 minute. Flip and continue cooking until no longer runny, which should take 3 to 5 minutes.
  • Place the boiled eggs on a cutting board to cool briefly. Gently roll them into a tube shape and slice into thin ribbons.
  • Add Chinese sausage to the skillet on medium heat. Cook until fragrant and oil is released, about 3 minutes. Introduce shrimp, scallops, and mushrooms. Cook for 3 to 5 minutes, then transfer to a bowl.
  • Add the drained rice to the skillet and sauté until lightly toasted, for about 1 to 2 minutes. Pour in the reserved mushroom water and stir continuously until absorbed. Gradually add hot water, 1/2 cup at a time, stirring until absorbed after each addition. Continue cooking until the rice is tender, around 25 minutes.
  • Enhance rice with a flavorful blend of soy sauces and a touch of sugar. Add delicate egg ribbons and savory sausage mixture. Finish with a sprinkle of fresh cilantro right before serving.
