Tasty chicken tinga tacos with homemade sweet and spicy BBQ sauce.
Ingredients:
  • 1.5 pounds skinless, boneless chicken breast halves
  • 1 large yellow onion, chopped, divided
  • 6 whole garlic cloves
  • 0.5 cup ketchup
  • 0.5 cup beer
  • 0.33333334326744 cup distilled white vinegar
  • 1 medium jalapeno pepper, seeded and minced
  • 2 tablespoons brown sugar
  • 2 teaspoons ground dried chipotle chili pepper
  • 1 teaspoon dry mustard
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon salt
  • 1 tablespoon salted butter, or more to taste
  • 3 cloves garlic, minced
  • 6 (6 inch) corn tortillas, or as needed
Instructions:
  • Place the chicken, half of the onion, and 6 garlic cloves in a pot and cover with water. Bring to a boil, then reduce heat and simmer for about 25 minutes, or until the chicken is cooked through and reads 165 degrees F (74 degrees C) on an instant-read thermometer.
  • Remove the tender chicken from the pot, gently discard the aromatic garlic and cooking water, then expertly shred the chicken once cooled to perfection.
  • Mix together ketchup, beer, vinegar, jalapeno pepper, brown sugar, ground chili pepper, mustard, cumin, paprika, and salt to create the flavorful sauce.
  • In a large saucepan over medium heat, melt butter until sizzling. Add the rest of the onion and minced garlic, sauté until onion is soft and translucent, around 5 minutes. Drizzle the sauce over the chicken, stirring until fully combined and warmed, for about 2 to 3 minutes.
  • Spoon the flavorful chicken mixture onto warm tortillas for a delicious meal.
