Spicy chipotle cornbread with BBQ twist and bran for extra flavor.
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 1 cup cornmeal
  • 1 cup Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 1/4 cups buttermilk
  • 1/4 cup barbecue sauce
  • 2 tablespoons finely chopped canned chipotle chiles in adobo sauce (from 7-oz can)
  • 2 tablespoons vegetable oil
  • 1 egg
Instructions:
  • Preheat the oven to 400°F. Grease an 8-inch square pan with cooking spray. Combine cereal, cornmeal, flour, baking powder, baking soda, salt, and chili powder in a large bowl; set aside.
  • Combine all the other ingredients in a medium bowl. Mix it into the cereal mixture and then pour everything into the pan.
  • Bake for 25-28 minutes until beautifully golden brown. Serve it up hot and fresh!
