Savor beer-braised short ribs in flavorful tomato sauce with zesty gremolata for a delicious dinner.
Ingredients:
  • 3 teaspoons roasted ground cumin
  • 1 teaspoon salt
  • 3 1/2 lb beef short ribs
  • 2 tablespoons olive oil
  • 1 1/4 cups chopped onions
  • 4 cloves garlic, finely chopped
  • 1 bottle (12 oz) regular or nonalcoholic beer
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1/4 cup fresh lime juice
  • 1 large chipotle chile in adobo sauce (from 7-oz can), chopped
  • 1/4 cup sliced almonds, toasted, finely chopped
  • 1/4 cup finely chopped fresh cilantro
  • 2 teaspoons olive oil
  • 1 teaspoon grated lime peel
  • 1/8 teaspoon salt
Instructions:
  • Preheat the oven to 300°F. Combine cumin and 1 teaspoon of salt in a small bowl, then evenly rub the mixture over the ribs.
  • Heat 2 tablespoons of oil in a 6-quart ovenproof Dutch oven over medium-high heat. Brown half of the ribs on all sides, then repeat with the remaining ribs. Transfer the ribs to a plate. Cook onion and garlic in the Dutch oven for about 3 minutes until the onion is tender. Stir in beer to deglaze the pan, then add tomatoes, lime juice, and chipotle chile. Bring to a boil and return the ribs to the Dutch oven.
  • Cover and bake for 3 hours until meat is very tender. Transfer ribs to a serving platter and keep warm. Skim fat from cooking liquid, then bring to a boil. Let it boil for 15 minutes, or until it reduces by half.
  • In a small bowl, delicately mix all gremolata ingredients. Spoon the cooking liquid over the ribs and sprinkle with the gremolata.
