Spice up your burgers with chipotle peppers mixed in ground beef, topped with jack cheese and avocado for the ultimate summer burger.
Ingredients:
  • 1 1/2 pounds ground beef
  • 1/3 cup onion, grated
  • 2 to 4 chipotle peppers, minced (from canned chipotles in adobo), depending on how much chile heat you like
  • 1 tablespoon adobo sauce
  • 1 teaspoon ground cumin
  • 6 hamburger buns
  • 6 slices jack cheese
  • 2 avocados, sliced
  • Chipotle hot sauce to taste (we use Tabasco brand)
  • 1/3 cup cilantro, chopped (for garnish)
  • 2 poblano chile peppers (optional)
Instructions:
  • If using poblano chiles, roast them by coating with a little oil and grilling, broiling, or directly charring on a gas stovetop burner until blackened. Place the blackened peppers in a covered bowl to steam for 15 minutes. Peel off charred skin, remove seeds, slice into ribbons, and toss with oil and salt before setting aside.
  • Combine ground beef, grated onion, minced chipotles, adobo sauce, salt, cumin, and black pepper in a large bowl. Gently mix until just combined to avoid tough burgers.
  • Shape 4-6 burger patties from the mix, weighing about 1/4 to 1/3 pound each. Make a shallow indent in the center to prevent puffing during grilling.
  • Heat up the grill until you can comfortably hold your hand about an inch over the grates for 1 second.
  • Grill the burgers by cooking them with the lid down for 6-7 minutes on each side, adjusting time based on preferred doneness and grill temperature. Aim for an internal temperature of 140°F for medium rare or 160°F for well done.
  • Place a slice of Jack cheese on each patty and close the grill lid. Let the cheese melt for just over a minute. Toast the burger buns after flipping the burgers, ensuring they are lightly toasted to your preference. Transfer the buns to a tray near the grill to keep warm.
  • Assemble the burgers by placing them on the buns and topping with avocado slices, roasted poblanos (if using), cilantro, and hot sauce.
