Chipotle chicken in creamy sauce served with Mexican rice.
Ingredients:
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
  • 1 tablespoon olive oil
  • 0.5 cup diced onion
  • 0.5 cup chopped green bell pepper
  • 1 tablespoon butter
  • 0.75 cup low-sodium chicken broth
  • 2 chipotle peppers in adobo sauce
  • 0.5 cup sour cream
  • 0.25 cup chopped cilantro
Instructions:
  • Combine flour, garlic powder, salt, and black pepper in a large plastic bag. Seal the bag and shake to mix the seasonings. Add chicken pieces a few at a time, then shake to coat evenly.
  • In a large skillet over medium heat, sauté the onion and green pepper in olive oil until onion is translucent, for about 6 minutes. Melt butter, then add seasoned chicken and brown on all sides for about 10 minutes.
  • Turn up the heat to medium-high and add the chicken broth. Stir in the chipotle peppers with adobo sauce. Allow it to boil and let the chicken broth reduce by half, stirring occasionally for around 10 minutes. Take it off the heat, mix in the sour cream to create a silky sauce, and garnish with fresh cilantro before serving.
