Spicy chocolate cupcakes for a devilishly delicious treat.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup granulated sugar
  • 1/3 cup unsweetened dark baking cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon chipotle chili powder
  • 1/2 cup buttermilk
  • 1/3 cup butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla
  • 6 oz cream cheese, softened
  • 3 cups powdered sugar
  • Red gel or paste food color
  • Green food color
  • 1/2 to 1 teaspoon milk
Instructions:
  • Preheat your oven to 350°F and line 32 mini muffin cups with paper baking cups. In a large bowl, mix together all cake ingredients. Use an electric mixer on low speed until just combined, then beat on medium speed for 2 minutes. Fill each muffin cup 2/3 to 3/4 full, using about 1 tablespoon per cup.
  • Bake for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean. Allow it to stand for 10 minutes before removing from the pans onto cooling racks. Let it cool completely for about 20 minutes.
  • Combine cream cheese and powdered sugar in a small bowl. Mix with an electric mixer on low speed until well combined, then beat on medium speed until creamy. Spoon 2 tablespoons into each of two custard cups and set aside. Gradually mix in more frosting to the remaining mixture until smooth and spreadable. Frost the cupcakes.
  • Add a touch of red food coloring into 2 tablespoons of the frosting until it turns bright red. Mix in 1 drop of green food coloring into the remaining 2 tablespoons of frosting until it becomes medium green. Transfer each colored frosting into individual small resealable plastic bags. Cut a 1/4-inch opening in the corner of the red frosting bag. Pipe small chili pepper shapes onto each cupcake, gently curving and tapering to a soft point. Snip a small opening in the corner of the green frosting bag. Create a small squiggly stem at the wider end of the pepper. Store in the refrigerator.
