Spicy chipotle adds a modern twist to traditional potato leek soup in this easy, flavorful vegetarian dish.
Ingredients:
  • 0.25 cup butter
  • 2 large leeks, white and light green parts, chopped, or more to taste
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced, or more to taste
  • 1 chipotle pepper in adobo, minced, or more to taste
  • 1 pinch ground cumin, or to taste
  • 1 pinch dried thyme, or to taste
  • white pepper to taste
  • 4 cups vegetable broth
  • 3 Yukon Gold potatoes, diced
  • 0.5 cup milk
  • 0.25 cup heavy whipping cream
Instructions:
  • In a large pot over medium-low heat, melt butter until sizzling. Saute leeks with a sprinkle of salt until super soft, about 20 minutes. Introduce red bell pepper and garlic, continuing to cook and stir for 2 minutes. Sprinkle in chipotle pepper, cumin, thyme, and white pepper, stirring for another 2 minutes.
  • Combine vegetable broth and potatoes in the pot, then bring to a boil. Reduce heat, cover, and simmer the soup until potatoes are tender, about 30 minutes. Stir in milk and cream, then let the soup cool slightly for 10 to 15 minutes before serving.
  • Blend soup using an immersion blender until silky smooth. Allow it to simmer for approximately 5 minutes until thoroughly heated.
