Creamy, addictive baked mac and cheese with a smoky chipotle kick.
Ingredients:
  • 3 cups whole milk
  • 0.5 cup butter
  • 0.5 cup minced onion
  • 4 cloves garlic, minced
  • 3 chipotle chiles in adobo sauce, finely chopped
  • 1 teaspoon paprika
  • 2 cups shredded extra-sharp Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • Bring a large pot of lightly salted water to a rolling boil. Add macaroni and cook uncovered until al dente, about 8 minutes. Drain well in a colander in the sink.
  • Preheat your oven to 350°F (175°C) for the perfect cooking environment.
  • Grease a 9x13 inch baking dish and layer the macaroni at the bottom. Warm milk in a saucepan until hot but not boiling.
  • In a saucepan, melt butter and sauté onion, garlic, and chipotle chiles until onions are translucent, about 5 minutes. Gradually whisk in flour, then cook for 3 minutes while whisking constantly. Slowly pour in hot milk, whisking constantly. Stir in paprika, salt, and pepper. Simmer the mixture until thickened, about 2 minutes. Gradually add cheeses, stirring until melted and sauce is smooth.
  • Drizzle the sauce evenly over the macaroni in the baking dish and gently mix. Seal the dish with foil.
  • Bake the dish covered until it's bubbling and the macaroni has soaked up some sauce, approximately 40 minutes. Uncover and continue baking until the edges turn golden brown, for an extra 10 to 15 minutes.
