Elevate classic mac and cheese with smoky, spicy chipotle chiles.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 1 (11 ounce) can condensed Cheddar cheese soup
  • 1 (12 ounce) can evaporated milk
  • 1 pound shredded Colby cheese
  • 1 chipotle chile in adobo sauce, finely chopped
  • 0.5 cup panko bread crumbs
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease a 2-quart casserole dish.
  • 1. Bring a generously salted pot of water to a lively boil. Add elbow macaroni and stir occasionally until al dente, about 8 minutes. Drain well.
  • Combine cooked pasta with soup, evaporated milk, Colby cheese, and chipotle chile, ensuring everything is mixed thoroughly. Transfer the mixture to the casserole dish.
  • Combine panko bread crumbs with olive oil in a small bowl. Evenly spread the mixture over the casserole.
  • Bake until golden brown on the top and the casserole is bubbling, about 25-30 minutes in the preheated oven.
