Chipotle Mashed Potatoes

Elevate mashed potatoes with a zesty kick from garlic and chipotle peppers.
Ingredients:
  • 2 large potatoes, peeled and sliced
  • 1 chipotle pepper, seeded, or more to taste
  • 2 cloves garlic, minced
  • 1 small bunch fresh cilantro, chopped, or to taste
  • 2 tablespoons butter, softened
Instructions:
  • In a medium saucepan, bring water to a boil. Add potatoes and simmer over medium heat, stirring occasionally, until tender when pierced with a fork, for 20 to 30 minutes. Drain the potatoes.
  • In a food processor, pulse chipotle pepper and garlic until minced. Add potatoes and blend until mostly smooth. Pour in milk, cilantro, butter, and salt. Blend until combined with a slightly lumpy texture.
