Flavorful chipotle meatballs made with pork, bacon, garlic, breadcrumbs, and oregano in a smoky chipotle chili tomato sauce.
Ingredients:
  • Meatballs
  • 2 slices bacon, minced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup bread crumbs
  • 1 1/2 teaspoons salt
  • 1 1/2 pounds ground pork
  • 2 teaspoons dried oregano or fresh mint, finely chopped
  • 1-2 teaspoons chipotle powder (or a couple teaspoons adobo sauce)
  • Sauce
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, chopped, about 1 cup
  • 1-3 chipotles chiles in adobo (canned), minced fine and sauce reserved
  • 1 28-ounce can crushed tomatoes (preferably fire-roasted)
  • 1 teaspoon dried oregano
  • 1/2 cup beef or chicken broth
Instructions:
  • Heat the oven to 400°F.
  • Combine all meatball ingredients in a large bowl and gently mix with your hands for 1-2 minutes until well combined. Be careful not to overmix to ensure tender meatballs.
  • Shape the meat mixture into 16 plum-size balls using wet hands or an ice cream scoop. Place them in a 13x9-inch baking dish or mini-muffin tin and bake at 400°F until lightly browned, about 15 minutes.
  • Prepare the sauce: Heat olive oil in a sauté pan over medium-high heat. Sauté onions until they begin to brown. Add garlic and cook for 1 minute. Stir in minced chipotles, canned tomatoes, broth, and oregano or mint. Season with salt. For extra chipotle essence, slowly incorporate reserved chipotle sauce, tasting as you go. Simmer sauce uncovered while meatballs bake.
  • Serve by adding the meatballs to the sauce and tossing until coated. If the sauce is thin, simmer for a few more minutes. Enjoy with rice, tortillas, or polenta. Top with fresh cilantro.
